Schäufele


 


usually made with  cured smoked pork shoulder, I never did find the right type of meat
but instead I discovered that smoked Turkey thigh (Brandt Company, Ontario)
works very well and taste almost the same


1 Schäufele of 1.5 kg (cured, smoked
Pork shoulder with bones from the butcher
Pre-order)
or smoked Turkey thigh
2 cups of vegetable broth
1 cup white wine
1 bay leaf
2 cloves
pepper
salt

place your meat into a large pot
add your liquids and top with water until the meat is covered
add herbs and seasoning
heat to a simmer, do not boil
simmer for about 1 - 1 1/2 depending on size

serve with potato salad
