Rösti


 

 

1 kg potatoes (starchy)

salt,

pepper

grated nutmeg

1 onion or two

4 tbsp oil

caraway seeds (optional)

 

the day before:

Bring a large pot of salted water to a boil.

Wash potatoes thoroughly and cook in the shell 12 min (no longer they can be grated easier).

Drain the potatoes, just rinse with cold water and peel immediately

 

next day:

Grate potatoes from the day before, peel onion and chop finely.

Add onion, salt, pepper and nutmeg to the potato. Add caraway, if desired.

Pour two tablespoon of oil in a hot cas iron skillet, heat oil than

add the Rösti mass in the desired portion size in the pan.

Press the Rösti lightly, so that they retain their shape.

Fry until the bottom is brown than slide out of the skillet.

Add  the remaining two tablespoon of oil to the skillet,

heat and fry the other side to a crispy brown.

 

Röstis is a great side for any meals, but are also delicious on top with a fried egg.

 

If you need quick Röstis for breakfast.

Grate the raw potato (usually 1 large per person)
add onion, mix in the seasoning. Put the mix onto a plate, flatten so it covers the plate
than microwave it for 3 minutes.

Gently transfer them into a hot skillet and fry.
