Potato Soup


1 1/2LB. potatoes
2Tbsp butter
1 onion (diced)
2 carrots (diced)
3 celery stalks (diced)
4C water
4 bouillon cubes
salt & pepper

Peel potatoes and cut into cubes.
Melt butter and saute potatoes, onions,carrots, and celery for 10 minutes.
Add water and bouillon cubes and simmer for 30 min.
Season with salt & pepper.
