French Onion Soup


4 large onions
50 g of butter
1 tbls of oil
1 tbls flour
1/2 cup of white wine
1 liter beef broth
salt, pepper
6 slices of French bread
300g grated Gruyer or Swiss Cheese

 

Peel and slice the onions
fry in a the mixture of butter and oil
sprinkle with flour and stir in warm broth and wine
season to taste, cover and let boil gently for 20 minutes
roast the bread, place one slice in each individual oven safe soup bowl
pour in soup, sprinkle with cheese
and place under broiler until cheese is melted and turns light brown
