Baden Remembered


Eis und Heiss- Vanilla ice cream with hot Raspberries


300 gr frozen raspberries

10 gr butter

20 gr Sugar

Juice of 1 orange

Juice of 1/2 lemon

20 ml Himbeergeist  (raspberry Schnapps)

20 ml Brandy

20 ml Gin

500 gr Vanilla Ice

Thaw the raspberries and drain them,

keep the juice

Melt the butter in a sauce pan and add the sugar, heat until caramelized

add the orange,  lemon juice and the raspberry juice and boil until reduced to half

reduce heat, add the raspberries and cook on medium heat until hot

In a small sauce pan, heat up  raspberry schnapps, brandy and gin,

ignite and poor while burning over the raspberries

devide your ice cream into for portions,

plate your ice cream,

cover with the raspberry sauce and serve immediately
